5th Birthday!

We celebrated our nephew's 5th birthday on April 19th with a small family dinner at the local Mexican restaurant.  He really enjoyed himself.  It's hard to believe he's already 5!

The waiters sang happy birthday and smeared ice cream on his face.  He was nice about it, but....

He really didn't care for it.  He's all boy, but doesn't like to be dirty or be laughed at.  I think he'll survive!

All Rigged Up!

Poor little girl has to wear the cone of shame. She had a growth removed from her eyelid so in order to stop her from scratching that area she has to wear the cone and we rigged one of my socks on her back paw. She looks pretty pathetic!

Change

My voice had been stifled, my confidence low, my purpose lost, my gifts pushed in the corner. I didn’t understand the benefit of team. New friendships I longed for were a far reach. Goals never achieved, dreams never thought of, vision non-existent.

Then God led me to Thirty-One and the real me started to slowly emerge.

I now know the importance of my voice, that I am beautiful, have a purpose, and I have many gifts. I love the support and encouragement being a part of a team offers. I am amazed everyday by all the new friendships that I have been blessed by. I can’t believe the goals I’ve accomplished and the dreams that are within my reach.

I thank God that He knew what He was doing when he led me to Thirty-One.

No Bake Healthy Bites

These are called No Bake Energy Bites on Pinterest, but I tweaked the recipe a bit and changed the name to No Bake Healthy Bites. I'm so glad to find a treat without sugar, white flour, and yeast. Here's the recipe the way I made it.

1 cup oatmeal
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1 cup unsweetened coconut flakes
1/2 cup carob chips, no sweetener added
1/2 cup sliced almonds
1 tsp vanilla
cinnamon to your liking

I mixed everything together and let it chill in the refrigerator for 30-45 minutes, then rolled the mixture into little balls. Keep in an airtight container in the refrigerator. You can store these for about a week, if they last that long!
